Wedding Menu Inspiration: Chef Mariusz’s Favourite Main Course Dishes

Welcome back to our Wedding Menu Inspiration series, where I, Chef Mariusz Rojek, share my top picks and advice for each course of your wedding meal here at Lucan Spa Hotel. We have already covered the starter dishes and soups/sorbets, so today, we’re talking about the star of the show – the main course. This is the dish most of your guests will look forward to, so getting it right is key. Your main course needs to balance flavour, presentation, and timing (remember, we’re serving many guests at once!). Below, I’ve highlighted some of my favourite main courses from our wedding menu, along with tips on choosing the best dish for your special day.


🥩 Roast Prime Irish Beef with Yorkshire Pudding & Red Wine Jus
Why I love it: This is a classic for a reason. The flavour of a perfectly roasted prime Irish beef joint, paired with a rich red wine jus, always impresses. The Yorkshire pudding adds a nostalgic touch that many guests adore.

Best for: Couples who want a traditional main course that will appeal to all ages.

Chef’s Tip: Pair this with roasted root vegetables for a warming, crowd-pleasing plate—especially perfect for autumn or winter weddings.

🥩 8oz Irish Hereford Fillet Steak
Why I love it: The fillet steak is a showstopper. Tender, luxurious, and paired with a peppercorn sauce, it’s a real treat for your guests.

Best for: Smaller or more intimate weddings or when you want to really spoil your guests.

Chef’s Tip: Because this dish requires cooking to perfection, it’s best for weddings with smaller numbers or where you don’t mind a longer service time.


🦆 Crispy Half Silverhill Duck with Fruit Stuffing & Orange Sauce
Why I love it: Duck is a rich, indulgent option and always feels special for a wedding. The orange sauce adds a lovely sweetness that balances the dish.

Best for: Couples who want to offer something a little different to their guests. 

Chef’s Tip: Duck can be quite filling — pair this with a fresh, light starter or sorbet course.


🍗 Roast Crown of Turkey & Honey Baked Ham
Why I love it: This dish is a crowd favourite and a nod to classic Irish and Dublin wedding celebrations. The combination of turkey and ham with sage and onion stuffing is perfect for couples who want a comforting, traditional choice.

Best for: Large weddings — it plates beautifully and suits most palates.

Chef’s Tip: Works wonderfully when paired with a lighter starter, as it’s a generous portion.

🍗 Grilled Supreme Breast of Chicken with Wild Mushroom & Tarragon Cream Sauce
Why I love it: This dish is elegant and versatile, with flavours that suit every season. The wild mushroom and tarragon cream sauce gives it a touch of sophistication without being too heavy.

Best for: Couples looking for a crowd-pleasing dish that still feels special.

Chef’s Tip: This option pairs beautifully with a glass of Chardonnay and is an excellent choice if you’re offering two mains — it complements a beef or fish dish perfectly, giving guests a balanced choice.


🐟 Grilled Fillet of Salmon with Tomato & Pepper Coulis 
Why I love it: Salmon is always a hit for those who prefer fish, and the bright, fresh coulis gives it a vibrant finish.

Best for: Summer weddings — it’s light, elegant, and works beautifully with white wine.

Chef’s Tip: Make this one of your alternate options alongside a meat dish so you can cater for guests who want a lighter main.


🥦 Vegetarian & Vegan Options
While these are listed as silent menu options, I always encourage couples to give them consideration. Dishes such as Garden Pea & Mushroom Risotto or Chef’s Vegetable Curry are every bit as satisfying as their meat counterparts and ensure that every guest is well catered for.

Chef’s Tip: Don’t forget to ask your guests in advance if they have dietary requirements — this allows us to prepare perfectly tailored dishes for them.
